Kiwifruit Jam

Ingredients:Kiwi Jam

4 1/2 cups prepared kiwifruit(about 4 pounds)

1 Box of Sure-Gel Pectin

7 Cups Sugar


Prepare fruit by cutting in half and scooping out pulp with a spoon. Crush and heat fruit for 3 minutes in a large heavy kettle. Add pectin and mix well. Place on high heat and stir until mixture comes to a hard boil. Add sugar all at once. Bring to a full rolling boil that cannot be stirred down. Boil hard for 1 minute. Remove from heat and quickly skim off foam with metal spoon. Pour at once into clean, hot jars, and seal. Process in a simmering water bath(180 degrees F.) for 5 minutes. Yield About 8 Cups.
